This sticky honey garlic chicken in the slow cooker is tender, juicy, and coated in a glossy, caramelized glaze. It’s a hands-off recipe that delivers restaurant-quality results with minimal effort, perfect for busy weeknights or meal prep.

Ingredients

Scale
  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1/2 cup (170g) honey
  • 1/3 cup (80ml) low-sodium soy sauce
  • 1/4 cup (60ml) ketchup
  • 6 cloves garlic, minced
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon (15ml) sesame oil
  • 2 tablespoons (16g) cornstarch
  • 2 tablespoons cold water
  • Green onions, thinly sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat if desired.
  2. In a medium bowl, whisk together honey, soy sauce, ketchup, minced garlic, rice vinegar, and sesame oil. Adjust sweetness or saltiness to taste.
  3. Place chicken thighs in the slow cooker in a single layer. Pour sauce evenly over the chicken.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken reaches 165°F (74°C) and shreds easily.
  5. Transfer chicken to a cutting board, let rest for 1-2 minutes, then shred into bite-sized pieces.
  6. Pour cooking liquid into a small saucepan. Bring to a boil, then simmer for 5-7 minutes until reduced by half and slightly thickened.
  7. In a small bowl, whisk cornstarch with 2 tablespoons cold water until smooth. Slowly pour into simmering sauce while whisking constantly. Cook 30-60 seconds until thickened.
  8. Return shredded chicken to slow cooker or a large bowl. Pour thickened sauce over chicken and toss to coat. Let sit 5 minutes.
  9. Garnish with sliced green onions and sesame seeds. Serve over steamed rice, noodles, or roasted vegetables.

Notes

The sauce reduction is key to achieving a sticky glaze—don’t skip it. For extra saucy chicken, double the sauce ingredients and reduce longer. Use a slow cooker liner for easy cleanup. Leftovers taste even better the next day.
