Ingredients

Scale
  • 2 medium apples (Honeycrisp or Granny Smith recommended)
  • 1 can (8 oz) refrigerated crescent roll dough
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup packed light brown sugar
  • 4 tablespoons unsalted butter (for caramel)
  • ¼ cup heavy cream
  • ½ teaspoon vanilla extract
  • ½ teaspoon flaky sea salt (plus more for finishing)
  • Vanilla ice cream (for serving, optional)
  • Extra flaky sea salt (for sprinkling, optional)
  • Chopped pecans or walnuts (for crunch, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with butter or nonstick spray.
  2. Peel the apples. Cut each apple in half through the core. Use a melon baller or small spoon to scoop out the core and seeds from each half, creating a hollow center.
  3. In a small bowl, mix together the granulated sugar, cinnamon, and nutmeg. In another small bowl, melt the 4 tablespoons of butter.
  4. Open the can of crescent roll dough and separate it into 4 rectangles by pressing the perforated seams together. Place one apple half, cut side up, in the center of each dough rectangle.
  5. Brush the dough with the melted butter, then sprinkle generously with the cinnamon sugar mixture. Fold the corners of the dough up and over the apple half, pinching the seams to seal. Place each wrapped apple half seam-side down in the prepared baking dish.
  6. In a small saucepan over medium heat, combine the brown sugar and 4 tablespoons of butter. Stir constantly until melted and bubbly, about 2-3 minutes. Slowly pour in the heavy cream while stirring. Cook for another minute, then remove from heat and stir in the vanilla extract and ½ teaspoon of flaky sea salt.
  7. Pour the warm caramel sauce over and around the dumplings in the baking dish. Bake at 375°F (190°C) for 25-30 minutes, or until golden brown and the caramel is bubbling and thick.
  8. Let the dumplings cool in the dish for about 5 minutes. Spoon some caramel from the dish over each dumpling, sprinkle with a bit more flaky sea salt, and serve warm with vanilla ice cream if desired.

Notes

Don’t overfill the dough; medium apples work best. Seal seams well to prevent leaking. Watch caramel carefully to avoid burning. Let dumplings rest 5 minutes before serving. Make extra caramel sauce for drizzling. For variations, try different apple varieties, add spices like cardamom or ginger, stuff with nuts, or make dairy-free with coconut cream.
