Creamy, no-cook overnight oats with peanut butter and banana that come together in just 5 minutes the night before. Perfect for busy mornings when you need a satisfying, grab-and-go breakfast.

  • 1/2 cup (50g) rolled oats (old-fashioned oats)
  • 1/2 cup (120ml) milk (dairy or plant-based)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter (natural preferred)
  • 1 medium ripe banana (about 100g mashed)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon (2ml) vanilla extract
  • Pinch of salt

Instructions

  1. In a mason jar or airtight container, mash the ripe banana with a fork until mostly smooth with a few small lumps.
  2. Add the milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract. Stir until the peanut butter is mostly incorporated.
  3. Sprinkle in the rolled oats, chia seeds (if using), and a tiny pinch of salt. Stir until everything is well combined and all oats are submerged in the liquid. Add a splash more milk if needed.
  4. Seal the container and refrigerate for at least 4 hours, but preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk to loosen. Top with extra banana slices, a drizzle of peanut butter, granola, or other desired toppings. Serve cold or microwave for 45-60 seconds for a warm version.

Notes

Use rolled oats, not instant or steel-cut. The riper the banana, the sweeter the oats. For best texture, let sit overnight (8-12 hours). Make multiple jars on Sunday for breakfast throughout the week. Store in the refrigerator for up to 4 days. Toppings can be added just before serving.
