  • 1 sheet frozen puff pastry, thawed
  • 8 oz cream cheese, softened
  • 1 cup frozen chopped spinach, thawed and squeezed dry
  • 1 cup canned artichoke hearts, drained and chopped
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large egg, beaten
  • Optional: ¼ cup sour cream

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Thaw your puff pastry. If it’s still cold from the fridge, let it sit on the counter for about 15 minutes. You want it pliable but still cold to the touch.
  3. Squeeze the spinach dry. Take the thawed spinach and wrap it in a clean kitchen towel or a few layers of paper towels. Squeeze firmly until no more water comes out.
  4. Make the filling. In a medium mixing bowl, combine the softened cream cheese, squeezed spinach, chopped artichoke hearts, mozzarella, Parmesan, minced garlic, salt, and pepper. If you’re using sour cream, add it here too. Mix everything together with a spatula until well combined. Taste and adjust salt if needed.
  5. Roll out the puff pastry. On a lightly floured surface, gently roll the puff pastry sheet into a 10×12-inch rectangle. Don’t press too hard.
  6. Spread the filling. Using your spatula, spread the spinach artichoke mixture down the center of the pastry rectangle, lengthwise. Leave about 2 inches of space on each side.
  7. Fold and seal. Fold one long side of the pastry over the filling, then fold the other side on top. Pinch the seam gently to seal. Carefully transfer the log to your prepared baking sheet, seam-side down. Shape it into a ring, connecting the two ends. Pinch the ends together to form a complete circle.
  8. Cut vents. Using a sharp knife, make 4-5 small slits on the top of the ring.
  9. Apply the egg wash. Brush the beaten egg all over the surface of the pastry.
  10. Bake. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed up and deep golden brown. The filling should be bubbly and hot.
  11. Cool slightly. Let the ring rest on the baking sheet for 5 minutes before transferring it to a cutting board.
  12. Serve warm. Slice into pieces and serve.

Don’t skip squeezing the spinach dry—it’s crucial for a crisp pastry. Keep the pastry cold to ensure flakiness. You can assemble the ring up to 24 hours in advance and refrigerate; brush with egg wash just before baking.
