  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed brown sugar (light or dark)
  • ½ cup (120ml) vegetable oil (avocado or canola)
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) buttermilk
  • 1 ½ cups (about 200g) grated zucchini (do not peel)
  • 1 cup (175g) semi-sweet chocolate chips (plus ¼ cup for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, letting edges hang over the long sides. Lightly grease any exposed sides.
  2. Grate the zucchini on the large holes of a box grater. Do not squeeze out the moisture. Set aside.
  3. In a large bowl, whisk eggs, granulated sugar, and brown sugar until smooth and slightly thickened, about 1 minute.
  4. Add vegetable oil, vanilla extract, and buttermilk. Whisk until fully combined and glossy.
  5. Sift flour, cocoa powder, baking soda, baking powder, and salt directly into the bowl. Stir gently with a rubber spatula until just combined (a few streaks of flour are fine).
  6. Fold in grated zucchini and most of the chocolate chips (reserve about ¼ cup for topping). The batter will be thick and slightly lumpy.
  7. Scrape batter into prepared loaf pan and spread evenly. Sprinkle reserved chocolate chips on top.
  8. Bake for 50 to 60 minutes, until a toothpick inserted into the center comes out with a few moist crumbs. If top browns too quickly after 40 minutes, tent loosely with foil.
