  • 2 pints (about 600g) cherry tomatoes, halved if large
  • ⅓ cup (80ml) extra-virgin olive oil
  • 2 tablespoons (30ml) balsamic vinegar
  • 3 cloves garlic, thinly sliced
  • 1 generous handful fresh basil (about 1012 large leaves), torn
  • 45 sprigs fresh thyme
  • 1 teaspoon flaky sea salt, plus more for finishing
  • ½ teaspoon freshly cracked black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 balls (about 8 ounces total) burrata cheese
  • 1 tablespoon (about half a lemon) fresh lemon juice

Instructions

  1. Prepare the tomatoes: Rinse cherry tomatoes and pat dry. Halve any larger than a marble; leave tiny ones whole. Place in a mixing bowl.
  2. Make the marinade: In a small skillet over low heat, combine olive oil, sliced garlic, and thyme sprigs. Warm gently for about 3 minutes until garlic is fragrant and translucent (do not brown). Remove from heat and let cool slightly.
  3. Combine and marinate: Pour warm oil mixture over tomatoes. Add balsamic vinegar, flaky sea salt, black pepper, and red pepper flakes if using. Toss gently to coat. Cover and let sit at room temperature for at least 30 minutes (or refrigerate up to 48 hours; bring to room temperature before serving).
  4. Prepare the burrata: About 20 minutes before serving, remove burrata from fridge. Drain and pat gently dry. Let come to room temperature on a cutting board.
  5. Assemble the salad: Using a slotted spoon, transfer marinated tomatoes to a serving platter, leaving most liquid behind. Arrange in an even layer, leaving clear spots for burrata. Place burrata balls in those spots.
  6. Add finishing touches: Tear basil leaves over the top. Drizzle 1-2 tablespoons reserved marinade over everything, focusing on burrata. Squeeze lemon juice over top. Finish with a pinch of flaky sea salt and crack of black pepper.
  7. Serve immediately: Bring to the table whole. At the table, break open burrata with a sharp knife or forks, letting the creamy center spill out. Gently toss or let each person serve themselves. Eat right away.

Notes

For best texture, let burrata sit at room temperature for 20 minutes before serving. The marinated tomatoes can be made up to 2 days ahead. Do not assemble with burrata until ready to serve. Save leftover marinade for drizzling on bread or pasta.
