  • 3 cups (about 300g) broccoli florets
  • ¼ cup (60ml) soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons (30ml) honey
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon (8g) cornstarch mixed with 2 tablespoons cold water
  • 1 teaspoon (5ml) sesame oil
  • 2 tablespoons (30ml) vegetable oil (avocado or canola)
  • Optional: sesame seeds and sliced green onions for garnish

Instructions

  1. Make the sauce: In a small bowl, whisk together soy sauce, honey, cornstarch slurry, minced garlic, and grated ginger. Set aside.
  2. Prep the broccoli: Wash and dry broccoli florets, cutting any large ones in half. Peel and slice thick stems if desired.
  3. Heat the pan: Place a large skillet or wok over high heat and add 1 tablespoon vegetable oil. Heat until shimmering.
  4. Brown the beef: Add ground beef to the hot pan. Break into crumbles and cook undisturbed for 2 minutes, then stir until no pink remains (4-5 minutes total). Spoon out excess fat if more than 2 tablespoons.
  5. Add the broccoli: Toss broccoli into the pan with the beef. Cook for 3-4 minutes, stirring occasionally, until bright green and slightly charred.
  6. Pour in the sauce: Stir the sauce again, then pour over beef and broccoli. Stir constantly for about 1 minute until thickened and glossy.
  7. Finish with sesame oil: Drizzle sesame oil over the stir fry, toss, and turn off heat immediately.
  8. Serve immediately over steamed rice or noodles. Garnish with sesame seeds and green onions if desired.

Notes

For best results, have all ingredients prepped before starting. Pat broccoli dry to avoid steaming. If sauce isn’t thickening, let it bubble another 30 seconds. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
