  • 2 medium ripe bananas, mashed
  • 1/2 cup small-curd full-fat cottage cheese (120g)
  • 1 scoop vanilla-flavored protein powder (approx. 30g)
  • 1/2 cup milk (120ml), dairy or plant-based
  • 1 large egg, room temperature
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: handful of chopped walnuts or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your baking dish with butter or non-stick spray.
  2. Mash the ripe bananas in a large mixing bowl with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the cottage cheese, egg, milk, and vanilla extract to the bananas and whisk or stir until creamy and well combined.
  4. In another bowl, mix the rolled oats, protein powder, baking powder, cinnamon, and salt until evenly distributed.
  5. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in walnuts or chocolate chips if using.
  6. Pour the batter into the prepared baking dish and spread evenly with a spatula.
  7. Bake for 25-30 minutes until the top is golden brown and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  8. Let the baked oats cool for 5-10 minutes on a wire rack before serving.
