  • 2 tablespoons whole milk (or any milk of choice)
  • ½ teaspoon mint extract (for frosting)
  • Green food coloring (a few drops)
  • Optional: A pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter with granulated sugar and light brown sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then stir in vanilla extract and mint extract.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed just until combined. Do not overmix.
  6. Gently fold in semi-sweet chocolate chips with a spatula.

  12. Once cookies are completely cool, spread a generous layer of frosting on each cookie using an offset spatula or butter knife.
  13. Optional: Sprinkle mini chocolate chips or crushed peppermint candies on top.

Notes

If dough is too soft or sticky, chill in the fridge for 15-20 minutes before scooping. Rotate baking pans halfway through baking for even results.
