  • 3 to 4 pounds boneless pork shoulder (Boston butt), trimmed of excess fat
  • 2 tablespoons smoked paprika
  • 1 tablespoon brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder (optional)
  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • Slider buns (soft dinner rolls or mini brioche buns)
  • Optional toppings: coleslaw, pickles, sliced red onions, extra BBQ sauce

Instructions

  1. Trim excess fat from the pork shoulder and pat dry with paper towels.
  2. In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, kosher salt, black pepper, and chili powder (if using) to make the dry rub.
  3. Rub the dry spice mixture evenly all over the pork shoulder. Let sit for at least 15 minutes at room temperature or refrigerate up to 4 hours.
  4. In a separate bowl, whisk together ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, smoked paprika, and cayenne pepper (if using) to make the BBQ sauce. Set aside.
  5. Place the seasoned pork shoulder into the slow cooker. Pour about half of the BBQ sauce over the pork, reserving the rest for serving.
  6. Cover and cook on low for 6 to 8 hours, or until the pork easily shreds with a fork and reaches an internal temperature of about 195°F (90°C).
  7. Transfer the pork to a large bowl and shred using two forks or meat claws. Discard large chunks of fat.
  8. Add some cooking juices from the slow cooker back into the shredded pork for moisture.
  9. Stir in the reserved BBQ sauce to taste, starting with half and adding more if desired.
  10. Optionally, slice and toast the slider buns on a baking sheet or grill pan until golden and slightly crisp.
  11. Assemble sliders by piling BBQ pulled pork on buns and topping with coleslaw, pickles, or sliced onions if desired.
  12. Serve immediately warm.

Notes

If pork seems dry after shredding, add a splash of apple juice or reserved cooking liquid to keep it moist. Toast slider buns to prevent sogginess and add crunch. Adjust BBQ sauce sweetness or tanginess by varying brown sugar or vinegar amounts. Save cooking juices to mix back into shredded pork for extra flavor and moisture.
