A quick and easy savory breakfast featuring toasted bread topped with creamy cottage cheese, sunny-side up eggs, and a generous sprinkle of everything seasoning for a flavorful crunch.

Ingredients

Scale
  • 2 slices of bread (sourdough or whole grain recommended)
  • ½ cup small-curd cottage cheese
  • 2 large eggs, room temperature
  • 1 teaspoon everything seasoning
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • Chopped fresh herbs (chives or parsley, optional)

Instructions

  1. Toast 2 slices of bread to your preferred crispness, about 3-4 minutes.
  2. Spoon ½ cup of small-curd cottage cheese into a bowl and stir gently. Season lightly with salt and pepper if desired.
  3. Heat 1 tablespoon of olive oil or butter in a non-stick skillet over medium heat. Crack 2 large eggs into the pan and cook sunny-side up for 3-4 minutes until whites are set but yolks remain runny. For over-easy eggs, flip carefully and cook an additional 30 seconds. Season lightly with salt and pepper.
  4. Spread the cottage cheese evenly over the warm toast.
  5. Place the cooked eggs on top of the cottage cheese.
  6. Sprinkle 1 teaspoon of everything seasoning evenly over the eggs and cottage cheese.
  7. Optionally, garnish with chopped fresh herbs like chives or parsley and serve immediately.

Notes

If cottage cheese is watery, drain briefly before spreading. Use medium heat to cook eggs to avoid rubbery whites. Toast bread well to prevent sogginess. Timing is key to serve warm and fresh. For dairy-free, substitute cottage cheese with vegan ricotta or mashed tofu. For gluten-free, use gluten-free bread. Variations include adding sliced avocado, tomato, or cheese.
