Savory Blackstone Smash Burgers Recipe with Easy Special Sauce at Home

Juicy, flavorful smash burgers cooked on a Blackstone griddle with a crispy crust and a tangy, creamy special sauce. Perfect for quick weeknight dinners or casual gatherings.

  • 1 lb ground chuck beef, 80/20 blend
  • Salt (kosher or sea salt)
  • Freshly cracked black pepper
  • ½ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp sweet pickle relish
  • 1 tsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tsp honey
  • 4 soft burger buns (brioche or potato buns preferred)
  • 4 slices American cheese
  • Thinly sliced red onions
  • Fresh dill pickle slices
  • Leaf lettuce (optional)
  • Tomato slices (optional)

Instructions

  1. Preheat your Blackstone griddle on medium-high for 5-7 minutes until very hot.
  2. In a mixing bowl, whisk together mayonnaise, Dijon mustard, sweet pickle relish, apple cider vinegar, garlic powder, smoked paprika, and honey. Cover and refrigerate until ready to serve.
  3. Divide ground chuck into 4 equal portions (about 4 oz each) and loosely roll into balls.
  4. Toast the buns cut-side down on the griddle for 1-2 minutes until golden brown. Remove and set aside.
  5. Place each beef ball on the hot griddle and immediately press down firmly with a spatula to about ¼ inch thickness. Hold for 10-15 seconds to form a crispy crust.
  6. Season each patty with salt and freshly cracked black pepper.
  7. Cook patties undisturbed for 2-3 minutes until edges are brown and crispy. Flip carefully.
  8. Place a slice of American cheese on each patty after flipping and cover loosely with a lid or foil tent to melt cheese for about 1 minute.
  9. Assemble burgers by spreading special sauce on bottom bun, adding lettuce if desired, then the cheeseburger patty, pickles, red onions, tomato slices if using, and top bun.
  10. Serve immediately while hot for best flavor and juiciness.

Notes

Do not press the patties repeatedly while cooking to avoid drying out. Use an 80/20 ground beef blend for juiciness and crust. The special sauce tastes better after resting in the fridge for a few hours. For gluten-free, swap buns for gluten-free buns or lettuce wraps. For dairy-free, use vegan mayo and skip or substitute cheese.
