  • 1 pound (450g) boneless, skinless chicken breasts, thinly sliced
  • 4 large garlic cloves, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon unsalted butter
  • Juice of half a lemon
  • Salt and freshly ground black pepper, to taste
  • Optional: red pepper flakes or smoked paprika

Instructions

  1. Slice 1 pound of boneless, skinless chicken breasts into thin cutlets about ½-inch thick. Pat dry with paper towels.
  2. In a small bowl, combine minced garlic, chopped parsley, thyme, rosemary, lemon juice, salt, and pepper. Stir to blend and set aside.
  3. Heat a skillet over medium-high heat and add olive oil and butter. Let the butter melt and the oil shimmer.
  4. Add chicken cutlets in a single layer without crowding. Cook for 3-4 minutes on one side until golden brown, then flip carefully.
  5. Spoon the garlic and herb mixture over the chicken pieces in the pan. Cook another 3-4 minutes, spooning the mixture occasionally.
  6. Taste and season with extra salt, pepper, or lemon juice if desired. Remove from heat once chicken reaches 165°F (75°C).

Notes

Do not overcrowd the pan; cook in batches if necessary to maintain a good sear. If garlic browns too quickly, lower the heat and stir frequently. For dairy-free, omit butter or use a plant-based spread. Fresh herbs are preferred but dried herbs can be used at half the quantity.
