  • 4 cups (about 300g) fresh broccoli florets, washed and trimmed
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce (optional but recommended)
  • 3 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon brown sugar
  • 2 tablespoons cornstarch
  • ½ cup (120ml) beef broth or water
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • Optional: red pepper flakes for heat, sesame seeds for garnish

Instructions

  1. Thinly slice 1 pound (450g) of flank steak or sirloin against the grain. Partially freeze the beef for 15 minutes beforehand to make slicing easier.
  2. In a bowl, combine 1 tablespoon soy sauce, 1 tablespoon cornstarch, and a pinch of black pepper. Toss the beef slices to coat evenly and let sit for 10 minutes.
  3. Whisk together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon brown sugar, ½ cup (120ml) beef broth or water, and 1 teaspoon sesame oil in a small bowl. Set aside.
  4. Bring a pot of salted water to a boil and blanch broccoli florets for 1-2 minutes until bright green and just tender. Drain and transfer immediately to ice water to stop cooking. Drain again and set aside.
  5. Heat 2 tablespoons vegetable oil in a wok or large skillet over medium-high heat until shimmering. Add marinated beef in a single layer and stir-fry for 2-3 minutes until browned but not fully cooked. Remove beef and set aside.
  6. In the same pan, add more oil if needed. Add minced garlic and grated ginger and stir quickly for 30 seconds until fragrant.
  7. Return beef to the pan with blanched broccoli. Pour sauce over and stir well. Cook for 1-2 minutes until sauce thickens and coats beef and broccoli. Add more broth or water if sauce is too thick.
  8. Taste and adjust seasoning with salt or red pepper flakes if desired. Sprinkle with sesame seeds if using. Serve immediately over steamed rice or noodles.

Notes

Partially freezing the beef before slicing makes it easier to cut thinly. Blanch broccoli briefly and shock in ice water to keep it crisp and vibrant. Avoid overcrowding the pan to prevent steaming the beef. Stir constantly when adding sauce to keep it glossy and prevent burning. Adjust seasoning at the end and add optional red pepper flakes for heat.
