Instructions

  1. Rinse, hull, and slice 2 cups of strawberries. Toss with 1 tablespoon lemon juice and 1 tablespoon honey or maple syrup. Let sit for 10 minutes to macerate.
  2. In a chilled large bowl, whip 3/4 cup heavy cream with an electric mixer until soft peaks form (about 3-4 minutes).
  3. In a separate bowl, mix 1 cup Greek yogurt with 1/2 cup vanilla protein powder and 1 teaspoon vanilla extract until smooth.
  4. Gently fold the whipped cream into the yogurt mixture using a spatula, maintaining airiness.
  5. Assemble trifle cups by layering 1/4 cup cake cubes at the bottom, followed by a layer of strawberry mixture, then a thick layer of protein mousse. Repeat layers if desired, ending with mousse on top.
  6. Refrigerate the assembled cups for at least 1 hour to let flavors meld and mousse set slightly.
  7. Before serving, garnish with fresh mint leaves, sliced almonds, or dark chocolate shavings.
