  • 8 to 10-pound pre-cooked spiral ham (bone-in recommended)
  • ½ cup honey (raw or wildflower preferred)
  • ½ cup brown sugar (packed)
  • 2 tablespoons mustard (Dijon or yellow)
  • 1 can pineapple rings (about 8 rings, in juice, not syrup)
  • 810 maraschino cherries (optional)
  • 1 teaspoon ground cloves
  • 1 tablespoon apple cider vinegar
  • ½ cup water or pineapple juice

Instructions

  1. Preheat your oven to 325°F (163°C). Place the rack in the middle position.
  2. In a small bowl, whisk together honey, brown sugar, mustard, ground cloves, and apple cider vinegar until smooth. Set aside.
  3. Place the spiral ham cut-side down on a rack in a roasting pan. Pour water or pineapple juice into the bottom of the pan.
  4. Cover the ham loosely with foil (shiny side down) and place in the oven.
  5. Bake for about 1 hour and 15 minutes (approximately 10 minutes per pound), basting every 20 minutes with the honey glaze using a silicone brush.
  6. About 15 minutes before baking is done, remove the foil and arrange pineapple rings over the ham’s surface. Secure each ring with a toothpick if needed.
  7. Continue baking uncovered for the last 15 minutes to let the glaze thicken and pineapple caramelize, watching carefully to avoid burning.
  8. Add maraschino cherries in the center of each pineapple ring if desired.
  9. Check internal temperature with a meat thermometer; it should read 140°F (60°C).
  10. Remove from oven and tent loosely with foil. Let rest for 10 minutes before slicing.

Notes

If ham is extra salty, soak in cold water for a couple of hours before cooking, changing water once. Baste gently to avoid separating spiral slices. Use a meat thermometer to avoid overcooking. For a deeper flavor, brush glaze again after baking and let sit before slicing. If glaze looks watery, reduce vinegar slightly.
