Ingredients

  • Bone-in Spiral-Cut Ham (about 7-8 lbs)
  • Brown Sugar (1 cup)
  • Pineapple Juice (1/2 cup)
  • Honey (1/4 cup)
  • Dijon Mustard (2 tablespoons)
  • Ground Cinnamon (1/2 teaspoon)
  • Ground Cloves (1/4 teaspoon, optional)
  • Crushed Pineapple (1/2 cup, drained, optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and pat dry with paper towels. If your ham isn’t spiral-cut, score the fat in a diamond pattern about 1/4 inch deep.
  3. Place the ham cut-side down on the rack inside your roasting pan.
  4. In a medium bowl, whisk together brown sugar, pineapple juice, honey, Dijon mustard, cinnamon, and ground cloves until smooth. Stir in the crushed pineapple if using.
  5. Use a pastry brush to coat the entire surface of the ham with about half the glaze. Reserve the rest for basting during baking.
  6. Bake the ham uncovered for 1 hour 15 minutes (about 10-12 minutes per pound). Every 20 minutes, baste the ham with more glaze.
  7. Tent with foil if the glaze starts getting too dark to prevent burning.
  8. Check internal temperature if desired; aim for 140°F (60°C) for a warm, juicy ham.
  9. Remove the ham from the oven and let it rest for 10-15 minutes.
  10. Slice and serve warm.

Basting the ham every 20 minutes is key to achieving a sticky, caramelized glaze. Let the ham rest after baking to keep it juicy. Tent with foil if glaze darkens too quickly. Use a spiral-cut ham for best glaze penetration.
