A simple and elegant recipe for garlic butter lobster tails that is quick to prepare and delivers rich, buttery, and tender lobster meat perfect for special occasions or a treat-yourself dinner.

  • 4 medium-sized lobster tails (6 oz / 170 g each), fresh or thawed frozen
  • 6 tablespoons unsalted butter (85 g), softened
  • 4 large garlic cloves, minced finely
  • 1 tablespoon freshly squeezed lemon juice (15 ml)
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon paprika
  • Salt to taste (preferably kosher salt)
  • Black pepper to taste, freshly cracked
  • Optional: pinch of red pepper flakes
  • Optional: ½ teaspoon dried thyme

Instructions

  1. Preheat your oven to 425°F (220°C) and position the rack in the middle.
  2. Using kitchen shears, cut down the top shell lengthwise, stopping just before the tail fin. Gently pull apart the shell to expose the meat, then carefully lift the meat up and rest it on top of the shell.
  3. In a small bowl, combine softened butter, minced garlic, lemon juice, chopped parsley, paprika, salt, and pepper. Mix until fully incorporated.
  4. Brush the lobster meat generously with the garlic butter mixture. Reserve a tablespoon or two for basting during cooking.
  5. Place the prepared lobster tails on a baking sheet, shell side down.
  6. Bake in the preheated oven for 12-15 minutes until the meat is opaque and firm but still juicy.
  7. At around 7 minutes, baste the lobster meat again with the reserved garlic butter to keep it moist and flavorful.
  8. Remove from oven and let rest for 1-2 minutes. Optionally, squeeze extra lemon over the top and garnish with extra parsley before serving.

Notes

If desired, broil the lobster tails for the last 1-2 minutes to get a slightly charred finish, watching carefully to avoid burning. Avoid overcooking to prevent rubbery texture. For dairy-free version, substitute butter with vegan butter or olive oil. Lobster tails can be grilled shell side down over medium heat for 8-10 minutes, basting frequently with garlic butter.
