  • 1 teaspoon fresh rosemary, finely chopped (optional)
  • Crackers or sliced baguette for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the pecans: Place the chopped pecans in a dry skillet over medium heat. Stir frequently for about 3-5 minutes until fragrant and lightly browned. Remove from heat and set aside.
  3. Prepare the cranberries and honey: In a small bowl, combine the fresh cranberries with 2 tablespoons of honey. Stir gently to coat the berries.
  4. Score the brie: Using a sharp knife, lightly score the top rind of the brie in a crisscross pattern about ½ inch deep.
  5. Place the brie wheel in your baking dish or skillet. Spread the honey-cranberry mixture evenly over the top of the brie.
  6. Sprinkle the toasted pecans and rosemary (if using) on top.
  7. Drizzle the remaining 1 tablespoon of honey over everything.
  8. Bake for 15-20 minutes until the brie is melty and soft but not collapsed.
