Simple, filling, and packed with protein, these breakfast burritos are perfect for campfire cooking or quick mornings at home. Made with just five ingredients, they deliver hearty flavors wrapped in a warm tortilla.

Ingredients

  • Large eggs (preferably farm-fresh or free-range)
  • Breakfast sausage, cooked and crumbled
  • Flour tortillas, 8-inch size
  • Shredded cheddar cheese (sharp or mild)

Instructions

  1. Cook the sausage over medium heat in a skillet for 5 to 7 minutes until browned and cooked through. Drain excess fat if needed.
  2. Push the sausage to one side of the skillet and add butter or oil. Whisk eggs lightly with salt and pepper, pour into the pan, and scramble gently until just set but still moist, about 3 to 4 minutes.
  3. Remove the egg and sausage mixture from the pan. Warm each tortilla in the same skillet for about 30 seconds per side until pliable.

  5. Fold the sides of the tortilla inward, then roll tightly from the bottom up to enclose the filling completely.
