  • 4 large egg whites (about 120 ml)
  • 2 to 3 ounces (6085 g) turkey sausage, cooked and crumbled
  • 1 cup (30 g) fresh spinach, roughly chopped
  • 1 large whole wheat or low-carb tortilla (810 inch / 2025 cm)
  • 1 teaspoon (5 ml) olive oil or cooking spray
  • Salt and freshly ground black pepper, to taste
  • ¼ teaspoon garlic powder or fresh minced garlic (optional)
  • Pinch of red pepper flakes (optional)
  • Fresh herbs like parsley or chives for garnish (optional)

Instructions

  1. Heat 1 teaspoon (5 ml) of olive oil in a skillet over medium heat. Add 2 to 3 ounces (60-85 g) of turkey sausage, breaking it apart with a spatula. Cook until browned and cooked through, about 5-6 minutes. Drain on paper towels if needed to remove excess fat.
  2. While the sausage cooks, rinse and roughly chop 1 cup (30 g) of fresh spinach. Set aside.
  3. In a mixing bowl, whisk 4 large egg whites (120 ml) with a pinch of salt, pepper, and optional garlic powder until slightly frothy.
  4. Lower heat to medium-low. Pour egg whites into the skillet, spreading evenly. Let them set slightly, then add cooked sausage and spinach on top.
  5. Using a spatula, gently fold the egg whites, sausage, and spinach together. Cook until egg whites are fully set but still moist, about 2-3 minutes. Avoid overcooking to keep the wrap tender.
  6. While eggs finish cooking, warm the tortilla in a dry skillet or microwave for 15 seconds until pliable.
  7. Spoon the egg, sausage, and spinach mixture onto the center of the tortilla. Add fresh herbs if using. Fold the sides and roll tightly to form a wrap.
  8. Optional: For a crispier wrap, place it seam side down in the skillet on medium heat for 1-2 minutes per side until golden and slightly crisp.

Notes

Use medium-low heat to avoid rubbery egg whites. Cook sausage first to control browning and texture. Warm tortilla just before assembling to prevent cracking. Optional crisping in skillet adds texture. Substitute turkey sausage with lean chicken sausage or plant-based sausage for dietary preferences. Fresh spinach can be replaced with kale, arugula, or Swiss chard.
