A quick and refreshing watermelon and mint drink enhanced with lemon juice and a pinch of salt for natural electrolytes, perfect for hydration on hot days.

Ingredients

  • 4 cups cubed fresh seedless watermelon (about 600 grams)
  • 1012 fresh mint leaves, torn or chopped
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1/8 teaspoon sea salt or Himalayan pink salt
  • 2 cups cold water or sparkling water (480 ml)
  • 1 tablespoon honey or agave nectar (optional)

Instructions

  1. Cut about 1 small seedless watermelon into cubes, measuring roughly 4 cups.
  2. Place the watermelon cubes and 10-12 torn mint leaves into a blender. Pulse a few times to break down the mint, then blend on high for 30-45 seconds until smooth.
  3. Pour the mixture through a fine mesh strainer into a large bowl or pitcher, pressing the pulp to extract juice (optional).
  4. Stir in 2 tablespoons fresh lemon juice and 1/8 teaspoon sea salt.
  5. Taste and add 1 tablespoon honey or agave nectar if additional sweetness is desired.
  6. Pour in 2 cups cold still or sparkling water and stir gently.
  7. Serve chilled over ice, garnished with a sprig of fresh mint and a small wedge of watermelon.

Notes

Use ripe watermelon for best sweetness. Lightly bruise mint leaves before blending to release flavor. Straining is optional depending on preferred texture. Store leftovers in a sealed container in the fridge up to 24 hours and stir before serving.
