These fresh turkey taco lettuce wraps combine juicy, lean turkey seasoned with spices and a bright, sweet mango salsa, all wrapped in crisp lettuce leaves for a healthy, flavorful meal that’s quick and easy to prepare.

  • 1 lb ground turkey (lean 93%)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • Salt and pepper to taste
  • Juice of half a lime
  • 1 ripe mango, diced
  • ½ red bell pepper, finely chopped
  • ¼ cup red onion, finely diced
  • 1 jalapeño, seeded and minced (optional)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Pinch of salt
  • 1 head butter or romaine lettuce (leaves separated)
  • Optional toppings: sliced avocado, crumbled cotija cheese, Greek yogurt

Instructions

  1. Wash and separate lettuce leaves carefully to keep them intact for wrapping. Dice mango, red bell pepper, red onion, and jalapeño finely for the salsa. Chop cilantro and set aside. Mince garlic and finely chop onion for the turkey filling.
  2. In a medium bowl, combine diced mango, bell pepper, red onion, jalapeño, and cilantro. Squeeze in juice of one lime and sprinkle a pinch of salt. Gently toss to mix and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add ground turkey, breaking it apart with a spatula. Cook until no longer pink, about 7-8 minutes. Stir in cumin, smoked paprika, chili powder, salt, and pepper. Mix well to coat evenly.
  5. Squeeze juice of half a lime over the turkey, stir, and remove from heat.
  6. Lay out lettuce leaves on a serving platter. Spoon warm turkey mixture into each leaf, then top with mango salsa. Add optional toppings like sliced avocado or cotija cheese if desired.
  7. Serve immediately while turkey is warm and lettuce is crisp.

Notes

Do not overcook the turkey to keep it juicy. Chop salsa ingredients finely for balanced flavor and texture. Keep lettuce leaves dry and optionally warm them slightly to make pliable. Frozen mango can be used if fresh is unavailable. Adjust jalapeño for spice preference. Store turkey filling and salsa separately if making ahead.
