  • 1 small red onion, thinly sliced
  • 1/3 cup feta cheese (35 g), crumbled (optional)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar or balsamic vinegar
  • 1 tbsp honey (or maple syrup for vegan option)
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Optional add-ons: avocado slices, cucumber ribbons, fresh herbs like basil or mint

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat a grill pan or skillet over medium-high heat and cook the chicken for about 6-7 minutes per side or until internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing thinly.
  3. While the chicken cooks, toast the walnuts in a dry skillet over medium heat for 4-5 minutes, stirring frequently. Set aside to cool.
  4. In a large bowl, combine mixed greens, sliced strawberries, and thinly sliced red onion. Toss gently.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until emulsified.
  6. Add sliced chicken and toasted walnuts to the salad base. Drizzle dressing over and toss gently to coat.
  7. Sprinkle crumbled feta cheese on top if using.
  8. Taste and adjust seasoning with more salt or pepper if needed. Serve immediately.
