These Fresh Smoked Salmon Cucumber Bites with Dill Cream Cheese are a quick, elegant appetizer combining smoky salmon, crisp cucumber, and a tangy herb-infused cream cheese spread. Perfect for last-minute snacks or entertaining guests.

Ingredients

Scale
  • 8 ounces smoked salmon, thinly sliced
  • 1 large English cucumber or 2 smaller Persian cucumbers, sliced into 1/2-inch rounds
  • 4 ounces cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • Zest of 1 lemon
  • 1 teaspoon fresh lemon juice
  • Salt and black pepper, to taste
  • 1 tablespoon capers, drained (optional)
  • Chives or green onions, thinly sliced (optional)

Instructions

  1. In a mixing bowl, combine softened cream cheese, chopped fresh dill, lemon zest, and fresh lemon juice. Blend until smooth and fluffy, about 2 minutes. Season with salt and black pepper. If cream cheese is too stiff, add a teaspoon of milk or water to loosen.
  2. Slice the cucumber into 1/2-inch thick rounds using a sharp knife. Pat slices dry with a paper towel if watery.
  3. Cut smoked salmon into pieces roughly the size of cucumber rounds if slices are large.
  4. Spread a generous dollop of dill cream cheese on each cucumber slice using a small spoon or piping bag. Top with a piece of smoked salmon. Optionally, add a caper or sprinkle thinly sliced chives on top.
  5. Arrange cucumber bites on a platter and refrigerate for 10-15 minutes before serving to meld flavors and keep bites fresh and crisp.

Notes

Let cream cheese soften at room temperature before mixing for easier whipping. Pat cucumber slices dry to prevent sogginess. Assemble bites no more than 1 hour before serving for best texture. Variations include using dairy-free cream cheese or smoked trout, and adding herbs like tarragon or parsley.
