A vibrant and creamy smoothie blending fresh spinach and ripe mango for a refreshing, nutrient-packed drink perfect for breakfast or a quick snack.

Ingredients

  • 2 cups fresh spinach leaves, loosely packed
  • 1 cup ripe mango, peeled and chopped
  • 1 medium banana, frozen or fresh
  • 1 cup (240 ml) unsweetened almond milk
  • ½ cup (120 g) plain Greek yogurt, full-fat or low-fat
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup (optional)
  • ½ cup ice cubes (optional)
  • 1 tablespoon chia seeds or flaxseeds (optional)

Instructions

  1. Wash and prep the spinach by rinsing under cold water and patting dry or using a salad spinner (about 3 minutes).
  2. Peel and chop the mango into chunks. Peel the banana and break into pieces if fresh (about 5 minutes).
  3. Add the spinach to the blender and pulse for about 20 seconds until finely chopped and beginning to liquefy.
  4. Add almond milk, Greek yogurt, chopped mango, banana, lemon juice, and optional honey or maple syrup. Add ice cubes and seeds if using.
  5. Blend on high speed for 45-60 seconds until creamy and uniform, scraping down the sides if needed.
  6. Check consistency and taste; add more almond milk if too thick and blend for 10 seconds. Add more sweetener if desired.
  7. Serve immediately in a glass or reusable cup.

Notes

Blend spinach alone first to avoid leafy bits. Use ripe mango for natural sweetness. Freeze banana ahead for a colder smoothie. Add protein powder or nut butter for extra protein. Store in fridge up to 24 hours and shake before drinking.
