  • 1 pound fresh green beans, trimmed and rinsed
  • 1/3 cup sliced almonds (about 35 g), preferably raw
  • 2 tablespoons unsalted butter (about 28 g)
  • 1 clove garlic, finely minced
  • Zest of 1 medium lemon
  • 1 tablespoon fresh lemon juice (15 ml)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Rinse 1 pound of fresh green beans and trim the ends. Pat dry with a kitchen towel (about 5 minutes).
  2. Heat 2 tablespoons of unsalted butter in a large skillet over medium heat. Once melted and bubbling, add 1/3 cup of sliced almonds. Stir frequently for 2-3 minutes until almonds turn golden and smell nutty. Remove almonds from the skillet with a slotted spoon and set aside.
  3. In the same skillet with remaining butter, add minced garlic and cook for about 30 seconds until fragrant.
  4. Add the green beans and toss to coat. Cook over medium heat for 6-8 minutes, stirring occasionally, until beans are crisp-tender and bright green. For softer beans, cook 1-2 minutes longer.
  5. Remove skillet from heat. Stir in toasted almonds, lemon zest, and fresh lemon juice. Season with salt, freshly ground black pepper, and optional red pepper flakes to taste. Toss gently but thoroughly to combine.
  6. Transfer to a serving dish and serve immediately while warm.

Notes

Toast almonds separately to keep them crunchy. Use fresh lemon zest for best flavor. Avoid overcooking green beans to maintain crisp-tender texture. For dairy-free, substitute butter with olive oil or vegan butter. Add extra lemon zest before serving for more brightness.
