A light and airy no-bake mousse combining fresh strawberries and smooth white chocolate for a quick, easy, and delicious homemade dessert.

  • 1 cup fresh strawberries, hulled and sliced
  • 6 ounces (170 grams) white chocolate, chopped
  • 1 cup (240 ml) heavy whipping cream, cold
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon gelatin powder (optional)
  • 2 tablespoons cold water (to bloom gelatin if using)

Instructions

  1. Prepare the strawberries by washing, hulling, and slicing 1 cup. Puree about half using a blender or food processor until smooth. Optionally, push puree through a fine mesh sieve to remove seeds. Combine puree with remaining sliced strawberries and set aside.
  2. If using gelatin, sprinkle 1 teaspoon gelatin powder over 2 tablespoons cold water and let sit for 5 minutes to bloom.
  3. Gently melt 6 ounces chopped white chocolate using a double boiler or microwave in 20-second intervals, stirring frequently. Set aside to cool slightly but not harden.
  4. In a chilled mixing bowl, whip 1 cup cold heavy whipping cream with 2 tablespoons granulated sugar and 1 teaspoon vanilla extract using an electric mixer on medium-high speed until soft peaks form. Avoid overwhipping.
  5. If using gelatin, warm the bloomed gelatin gently until dissolved (about 10 seconds in microwave). Stir in 1 teaspoon fresh lemon juice.
  6. Slowly pour melted white chocolate into the gelatin mixture, stirring gently to combine. If skipping gelatin, add lemon juice directly to the cooled chocolate.
  7. Fold the strawberry puree and slices into the white chocolate mixture gently using a spatula to keep airiness.
  8. Fold one-third of the whipped cream into the strawberry-chocolate mixture to lighten it, then fold in the remaining whipped cream until uniform and fluffy.
  9. Spoon mousse into serving glasses or ramekins. Cover and refrigerate for at least 2 hours or overnight to set.
  10. Garnish with fresh strawberry slices or white chocolate shavings before serving.

Notes

Keep all ingredients and equipment cold for best whipping results. Melt white chocolate gently to avoid seizing; add a splash of cream if needed. Fold whipped cream gently to maintain airiness. Gelatin is optional but helps mousse hold shape longer. Lemon juice balances sweetness and brightens flavor. Use coconut cream and dairy-free white chocolate for a dairy-free version. Frozen strawberries can be used if thawed and drained.
