Flavorful Seven Layer Taco Dip Recipe with Easy Homemade Guacamole

A quick and easy seven layer taco dip featuring creamy homemade guacamole, perfect for potlucks, game days, or family gatherings. This flavorful dip combines layers of refried beans, sour cream, cheddar cheese, fresh veggies, and zesty guacamole for a crowd-pleasing snack.

  • 1 can (16 oz / 450 g) refried beans, smooth and creamy variety
  • 1 cup (240 ml) sour cream, full-fat or Greek yogurt as substitute
  • 1 ½ cups (150 g) shredded cheddar cheese, sharp or mild
  • 1 cup (30 g) shredded lettuce, iceberg or romaine
  • 1 cup (150 g) diced tomatoes, fresh or fire-roasted canned
  • ½ cup (75 g) sliced black olives (optional)
  • ½ cup (50 g) thinly sliced green onions, including green tops
  • 1 small jalapeño, finely diced (optional)
  • For the Creamy Homemade Guacamole:
  • 3 medium ripe avocados, peeled and pitted
  • 2 tablespoons (30 ml) fresh lime juice
  • 2 tablespoons finely chopped fresh cilantro (optional)
  • 1 small clove garlic, minced
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon ground cumin

Instructions

  1. Prepare the guacamole: Scoop ripe avocados into a bowl and mash gently with a fork or potato masher until creamy but still a little chunky.
  2. Add fresh lime juice, minced garlic, chopped cilantro, salt, and ground cumin to the mashed avocados. Mix well and adjust seasoning to taste. Set aside.
  3. Spread the entire can of refried beans evenly at the bottom of a shallow, wide serving dish (about 9×9 inches). Smooth the surface with the back of a spoon or spatula.
  4. Carefully spread sour cream (or Greek yogurt) evenly over the refried beans without mixing the layers.
  5. Sprinkle shredded cheddar cheese evenly over the sour cream layer.
  6. Add a layer of shredded lettuce on top of the cheese.
  7. Scatter diced tomatoes, sliced black olives, and chopped green onions across the top layer. Add diced jalapeños if using.
  8. Spoon the creamy homemade guacamole on top in dollops or spread smoothly, according to preference.
  9. Cover the dip with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld and layers to firm up before serving.

Notes

If refried beans are too thick, stir in a tablespoon of water or lime juice to loosen for easier spreading. Use room temperature sour cream for easier spreading. Avoid over-mashing guacamole to keep texture interesting. Drain diced tomatoes to prevent watery dip. Serve chilled or slightly cold. Cover leftovers tightly and refrigerate up to 3 days. Guacamole layer may brown but can be stirred gently to restore color.
