  • 1/2 cup yellow onion, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil (for mixing and brushing grill)
  • 1/2 cup mayonnaise
  • 1 to 2 tablespoons chipotle peppers in adobo sauce, finely chopped
  • 1 teaspoon fresh lime juice
  • 1/4 teaspoon garlic powder
  • Pinch of salt (for aioli)
  • Iceberg or butter lettuce leaves, washed and dried
  • Tomato slices (optional)
  • Red onion slices
  • Avocado slices

Instructions

  1. Finely dice the yellow onion and mince the garlic cloves. Chop the chipotle peppers finely. Wash and dry the lettuce leaves carefully.
  2. In a small bowl, combine mayonnaise, chopped chipotle peppers, lime juice, garlic powder, and a pinch of salt. Whisk until smooth and refrigerate.
  3. In a large bowl, mix ground turkey, diced onion, minced garlic, smoked paprika, ground cumin, salt, black pepper, and olive oil gently until combined.
  4. Divide the mixture into 4 equal portions and shape each into a 3/4-inch thick patty, making a small indentation in the center.
  5. Preheat grill or grill pan to medium-high (about 375°F). Brush grates or pan with olive oil.
  6. Grill patties for 6-7 minutes per side until golden brown and internal temperature reaches 165°F. Avoid pressing patties while cooking.
  7. Let patties rest for 3-5 minutes. Assemble wraps by placing a patty on a lettuce leaf, spreading chipotle aioli, and adding tomato, red onion, and avocado slices. Fold lettuce around fillings.

Notes

Do not overmix the turkey to keep patties tender. Use a meat thermometer to ensure patties reach 165°F for safety. Indent patties to prevent puffing. Let patties rest before assembling. Chill aioli before serving for best flavor. If aioli is too spicy, add more lime juice or a pinch of sugar.
