  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Zest of 1 lime
  • Pinch of salt and black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • Optional toppings: sour cream, sliced avocado, fresh cilantro, lime wedges

Instructions

  1. Prepare the Homemade Zesty Seasoning: In a small bowl, combine chili powder, cumin, smoked paprika, oregano, garlic and onion powders, crushed red pepper flakes, lime zest, salt, and black pepper. Mix well and set aside.
  2. Cook the Aromatics: Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until translucent and soft. Toss in the minced garlic and cook for another 30 seconds until fragrant.
  3. Brown the Ground Beef: Increase heat to medium-high and add the ground beef to the skillet. Break it apart with your spoon or spatula, stirring frequently. Cook for 6-8 minutes until browned and cooked through with no pink remaining. Drain excess fat if needed, leaving a little for flavor.
  4. Add the Zesty Seasoning: Sprinkle the homemade seasoning over the beef mixture. Stir to coat evenly, then pour in 1/4 cup (60ml) water. Reduce heat to low and simmer for 5 minutes, stirring occasionally.
  5. Prepare the Tortillas and Toppings: While the beef simmers, warm tortillas in a dry skillet over medium heat for about 20 seconds per side or until soft and pliable. Arrange shredded lettuce, diced tomatoes, cheese, and other toppings in serving bowls.
  6. Assemble the Tacos: Spoon generous portions of the beef mixture onto each tortilla. Add lettuce, tomatoes, cheese, and your favorite toppings like sour cream or avocado slices. Finish with a squeeze of fresh lime if desired.
  7. Serve and Enjoy: Serve immediately while warm.

Notes

If the beef feels too dry during simmering, add a splash more water or a squeeze of lime juice. Avoid overheating tortillas to keep them warm and flexible, not crispy or brittle. The homemade zesty seasoning can be made ahead and stored in an airtight container for up to 3 months. Ground turkey, chicken, or plant-based crumbles can be used as protein swaps. Corn tortillas are best for gluten-free diets.
