Easy Tender Instant Pot Mongolian Beef

A quick and easy Instant Pot recipe for tender Mongolian beef with a sweet and savory sauce, perfect for busy weeknights.

  • 1.5 pounds flank steak, thinly sliced against the grain
  • 1/4 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1/2 cup low sodium soy sauce
  • 1/3 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1/2 cup water or beef broth
  • 34 stalks green onions, sliced thinly
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Thinly slice 1.5 pounds of flank steak against the grain into 1/4-inch thick strips. Pat dry with paper towels.
  2. Toss the sliced beef with 1/4 cup cornstarch until lightly coated. Shake off excess cornstarch.
  3. Set Instant Pot to ‘Sauté’ mode and heat 2 tablespoons vegetable oil until shimmering. Brown beef in batches for 1-2 minutes per side. Remove and set aside.
  4. In the same pot, sauté minced garlic and grated ginger for 30 seconds until fragrant. Add 1/2 cup soy sauce, 1/3 cup brown sugar, 1/2 cup water or beef broth, and optional red pepper flakes. Stir to combine.
  5. Return beef to the pot and coat with sauce. Seal lid and pressure cook on high for 8 minutes. Allow natural pressure release for 5 minutes, then quick release remaining pressure.
  6. Turn Instant Pot back to ‘Sauté’ mode and stir beef. If sauce is not thickened, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into pot. Cook 2 more minutes until thick and glossy.
  7. Garnish with sliced green onions and serve immediately over steamed rice or noodles.

Notes

Do not skip the natural pressure release step to keep beef tender. Chill beef before slicing for easier cutting. Brown beef in batches to avoid steaming. Use cornstarch slurry to thicken sauce if needed. For gluten-free, use tamari and gluten-free cornstarch or arrowroot powder.
