  • 2 medium sweet potatoes, peeled and cubed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg, room temperature
  • 1/2 cup (50 g) breadcrumbs (plain or seasoned, panko works well)
  • 1/4 cup (60 ml) milk (any kind, dairy-free options okay)
  • 1/4 cup (60 ml) ketchup
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley, chopped
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut 2 medium sweet potatoes into 1-inch cubes. Toss them in 2 tablespoons of olive oil, a pinch of salt, and pepper. Spread evenly on one side of your sheet pan.
  3. In a large bowl, combine 1 lb ground turkey, 1 small finely chopped onion, 2 minced garlic cloves, 1 large egg, 1/2 cup breadcrumbs, 1/4 cup milk, 1/4 cup ketchup, 1 tbsp Worcestershire sauce, 2 tbsp chopped fresh parsley, 1 tsp smoked paprika, 1/2 tsp dried thyme, salt, and pepper to taste.
  4. Mix gently with hands or a spatula until just combined; avoid overmixing.
  5. Form the mixture into a loaf shape (about 8 inches long, 4 inches wide, and 2 inches high) and place it on the empty side of the sheet pan.
  6. Optional: Spread a thin layer of ketchup or BBQ sauce over the top for a glossy finish.
  7. Bake for 35-40 minutes, or until the internal temperature of the meatloaf reaches 165°F (74°C) and the sweet potatoes are tender and caramelized on the edges.
  8. Remove from oven and let the meatloaf rest for 5 minutes before slicing.
  9. Slice the meatloaf and serve alongside the roasted sweet potatoes. Garnish with extra parsley if desired.

Use a meat thermometer to ensure the meatloaf reaches 165°F for safety. Avoid overmixing the meat mixture to keep the meatloaf tender. If sweet potatoes cook faster, tent with foil to prevent burning. Rest the meatloaf before slicing to keep it juicy. Swap breadcrumbs for almond flour for gluten-free option. Fresh herbs brighten flavor but dried herbs can be used in a pinch.
