Easy One-Pan Lemon Garlic Chicken with Green Beans

A quick and flavorful one-pan meal featuring crispy lemon garlic chicken thighs roasted alongside crisp-tender green beans, perfect for busy weeknights or casual dinners.

  • 6 bone-in, skin-on chicken thighs (boneless optional)
  • 1 pound fresh green beans, trimmed and washed
  • 1 lemon, zested and juiced
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together olive oil, lemon juice and zest, minced garlic, dried thyme, dried oregano, salt, pepper, and optional red pepper flakes.
  3. Pat chicken thighs dry with paper towels. Rub half the marinade all over the chicken, including under the skin where possible.
  4. Toss green beans in the remaining marinade until evenly coated.
  5. Place chicken thighs skin-side up in a large oven-safe skillet or cast iron pan, spacing evenly. Scatter green beans around the chicken in a single layer.
  6. Roast in the preheated oven for 25-30 minutes. Halfway through (about 15 minutes), gently toss the green beans with tongs, leaving the chicken skin undisturbed.
  7. Check that the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy. Green beans should be tender with slight char.
  8. Remove from oven and let chicken rest for 5 minutes. Spoon pan juices over chicken and green beans before serving.

Notes

Patting the chicken dry before seasoning ensures crispy skin. Let chicken rest at room temperature for 15-20 minutes before cooking for even roasting. Avoid overcrowding the pan to prevent steaming the green beans. If chicken skin isn’t crispy enough, broil for 2-3 minutes watching closely. Fresh lemon and garlic provide best flavor. Leftovers keep well refrigerated for up to 3 days and reheat best in the oven.
