  • 1 small green bell pepper, diced

  • 1 cup (240 ml) tomato sauce
  • 2 tablespoons tomato paste
  • 1/4 cup (60 ml) ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chili powder (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup (120 ml) beef broth
  • 46 soft hamburger buns (brioche recommended)

Instructions

  1. Chop 1 medium yellow onion, 1 small green bell pepper, and mince 2 cloves of garlic (about 5 minutes).
  2. Set Instant Pot to ‘Sauté’ mode and heat for 2 minutes. Add 1 pound ground beef and break apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if needed.
  3. Add onions, bell pepper, and garlic. Cook for 3-4 minutes until vegetables soften and become fragrant.
  4. Mix in tomato sauce, tomato paste, ketchup, Worcestershire sauce, brown sugar, and Dijon mustard. Stir well to combine.
  5. Season with salt, black pepper, and chili powder (optional). Pour in beef broth.
  6. Seal the Instant Pot lid and set valve to ‘Sealing’. Select ‘Manual’ or ‘Pressure Cook’ mode for 5 minutes. It will take about 10 minutes to come to pressure.
  7. Perform a quick release by turning the valve to ‘Venting’ once cooking is complete. Open the lid after all pressure is released.
  8. Stir the mixture. If sauce is too watery, turn ‘Sauté’ back on and simmer for a few minutes until desired consistency is reached.
  9. Serve hot by spooning the sloppy joe filling onto soft hamburger buns. Add toppings like pickles, cheese, or coleslaw if desired.

Notes

Do not overcrowd the pot when browning beef for even cooking. Drain excess fat to avoid greasy sauce. Adjust seasoning before pressure cooking as flavors concentrate.
