  • 1 tablespoon freshly squeezed lemon juice

  • Freshly ground black pepper, to taste
  • 3 cups mixed vegetables (broccoli florets, snap peas, thinly sliced bell peppers, or seasonal alternatives like asparagus, carrots, green beans)
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet (about 15×10 inches) with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, whisk together honey, minced garlic, soy sauce, olive oil, lemon juice, and red pepper flakes if using, until smooth and glossy.
  3. Pat salmon fillets dry with paper towels. Season both sides with salt and freshly ground black pepper. Place skin-side down on one side of the prepared baking sheet.
  4. In another bowl, toss the chopped vegetables with a pinch of salt, pepper, and a drizzle of olive oil. Spread evenly on the other side of the baking sheet.
  5. Brush the honey garlic sauce generously over the salmon fillets and drizzle some over the vegetables.
  6. Bake in the preheated oven for 12-15 minutes, until salmon flakes easily with a fork and has a caramelized glaze, and vegetables are tender but still slightly crisp.
  7. Optional: Broil for 1-2 minutes at the end for extra caramelization, watching closely to prevent burning.
  8. Garnish with sesame seeds or chopped fresh herbs like parsley or green onions. Serve immediately with lemon wedges.

Notes

Pat salmon dry before seasoning to ensure a caramelized glaze. Let salmon sit at room temperature for 10-15 minutes before baking for even cooking. Avoid overcrowding the pan to allow proper roasting. If veggies cook faster, add them after salmon has baked for 5 minutes. Leftover sauce can be warmed and drizzled over reheated salmon. For gluten-free, substitute soy sauce with tamari or coconut aminos. Maple syrup can replace honey for a vegan twist.
