A quick and simple frozen yogurt bark with mixed berries, honey, and toasted almonds, perfect for a refreshing and healthy snack on hot days.

  • 2 cups (480 ml) plain Greek yogurt, full-fat or 2%
  • 1 cup (150 grams) mixed berries (blueberries, raspberries, strawberries, blackberries), fresh or frozen
  • 2 tablespoons (30 ml) honey, raw or mild-flavored
  • 1/4 cup (30 grams) toasted almonds, chopped (optional)
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1 tablespoon (15 grams) chia seeds (optional)

Instructions

  1. Line a rimmed baking sheet (about 9×13 inches / 23×33 cm) with parchment paper or a silicone baking mat to prevent sticking.
  2. In a medium mixing bowl, combine 2 cups plain Greek yogurt with 2 tablespoons honey and 1 teaspoon pure vanilla extract. Stir well until smooth and creamy, adjusting sweetness if desired.
  3. If using fresh berries, wash and dry thoroughly. Slice larger berries like strawberries into smaller pieces about 1/4 inch thick. If frozen, gently break up any clumps.
  4. Spread the yogurt mixture evenly over the lined baking sheet to about 1/4 inch thickness.
  5. Sprinkle mixed berries evenly over the yogurt layer, pressing lightly so they stick. Scatter chopped toasted almonds and optional chia seeds on top without pressing too hard.
  6. Freeze the baking sheet flat for at least 3 hours or until the bark is completely firm and frozen solid.
  7. Remove from freezer and let sit at room temperature for 2-3 minutes to soften slightly. Break into irregular pieces and serve immediately or store for later.

Notes

Use full-fat Greek yogurt for creamier texture and better freezing results. Adjust honey to taste to avoid overly sticky bark. Dry fresh berries well to prevent sogginess. Toast nuts before chopping for enhanced flavor and crunch. Let bark soften slightly before breaking for cleaner edges. Store in airtight container with parchment paper layers to prevent sticking.
