  • 2 medium bell peppers, mixed colors (red and yellow)
  • 1 large onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 fresh limes, juiced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: flour or corn tortillas, warmed

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a medium bowl, whisk together lime juice, olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper.
  3. Add shrimp to the marinade and toss to coat well. Let sit for about 10 minutes.
  4. Slice bell peppers into thin strips and slice the onion thinly.
  5. Spread the peppers and onions evenly on a rimmed sheet pan. Drizzle with olive oil and sprinkle with a pinch of salt. Roast for 10 minutes.
  6. Remove the sheet pan from the oven and arrange the marinated shrimp on top of the veggies in a single layer.
  7. Roast for another 6-8 minutes until shrimp turn opaque and slightly pink. Avoid overcooking.
  8. Sprinkle chopped cilantro over the shrimp and veggies and gently toss to mix flavors.
  9. Serve immediately with warm tortillas or over rice.

Notes

Do not overcrowd the pan to ensure proper roasting and caramelization. Use fresh lime juice for best flavor. Marinate shrimp for no longer than 10-15 minutes to avoid mushy texture. Toss shrimp and veggies halfway through roasting for even cooking. Watch shrimp closely to avoid overcooking. For extra smoky char, broil for 1-2 minutes at the end, watching carefully.
