These quick and flavorful pinwheel roll-ups combine melty cheese, smoky chicken, and southwest seasoning for a perfect party snack or appetizer that comes together in about 30 minutes.

  • 2 tablespoons diced green chilies (canned, mild or hot)
  • 1 teaspoon southwest seasoning blend (chili powder, cumin, smoked paprika, garlic powder, cayenne)
  • 1 teaspoon minced garlic
  • 1 tablespoon chopped fresh cilantro (optional)
  • 1 teaspoon fresh lime juice
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, combine shredded cooked chicken, cheddar cheese, Monterey Jack cheese, softened cream cheese, diced green chilies, southwest seasoning blend, minced garlic, chopped cilantro, and fresh lime juice. Mix until evenly combined. Add a splash of water or lime juice if mixture is too thick.
  3. Lay out one tortilla on a clean surface. Spread about ⅓ cup of the chicken and cheese mixture evenly over the entire tortilla, leaving about ½ inch border around the edges.
  4. Roll the tortilla tightly from one edge to the other, keeping the filling snug inside.
  5. Slice the roll-up into 1-inch thick pinwheels using a sharp knife, yielding about 8-10 pieces per tortilla.
  6. Arrange the pinwheels flat on the prepared baking sheet, spacing about an inch apart.
  7. Bake in the preheated oven for 15-18 minutes, or until the cheese is melted and edges are golden brown. Check around 12 minutes to avoid burning.
  8. Remove from oven and let cool for 5 minutes before serving to allow cheese to set.

Do not overload the filling to prevent bursting. Use room temperature ingredients for easier spreading. Chilling rolled tortillas before slicing helps keep pinwheels tidy. Use a sharp knife for clean slices. Check oven around 12 minutes to avoid over-browning. Can be air-fried at 360°F for about 10 minutes as an alternative cooking method.
