  • 2 tablespoons (25 g) brown sugar
  • 8 ounces (225 g) mascarpone cheese, softened
  • 1 cup (240 ml) heavy cream, chilled
  • ½ cup (100 g) granulated sugar
  • 3 large egg yolks, room temperature
  • 1 teaspoon (5 ml) vanilla extract
  • 2 tablespoons (30 ml) Irish whiskey (for mascarpone cream)
  • About 24 ladyfingers
  • Unsweetened cocoa powder (for dusting)
  • Dark chocolate shavings (optional)

Instructions

  1. Prepare the Coffee Soak: Brew 1 ½ cups (360 ml) of strong coffee or espresso. While hot, stir in 2 tablespoons (25 g) brown sugar and 3 tablespoons (45 ml) Irish whiskey until dissolved. Set aside to cool to room temperature (about 15 minutes).
  2. Make the Mascarpone Cream: In a medium bowl, whisk 3 large egg yolks with ½ cup (100 g) granulated sugar until pale and thick (3-4 minutes). In a separate large bowl, beat 1 cup (240 ml) chilled heavy cream until soft peaks form.
  3. Combine Mascarpone and Egg Mixture: Gently fold softened mascarpone (8 ounces / 225 g) into the egg yolk mixture until smooth. Then fold in the whipped cream carefully to preserve airy texture.
  4. Add Whiskey and Vanilla: Stir in 2 tablespoons (30 ml) Irish whiskey and 1 teaspoon (5 ml) vanilla extract into the mascarpone cream. Taste and adjust balance.
  5. Assemble the Tiramisu: Quickly dip each ladyfinger into the cooled coffee mixture for about a second on each side to avoid sogginess. Line the bottom of a 9×9 inch (23×23 cm) dish with a single layer of soaked ladyfingers.
  6. Layer the Cream: Spread half of the mascarpone cream evenly over the ladyfingers. Repeat with another coffee-dipped ladyfinger layer and top with remaining cream.
  7. Chill and Set: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld and texture to firm up.
  8. Finish with Cocoa and Chocolate: Just before serving, dust the top generously with unsweetened cocoa powder using a sieve. Optionally, sprinkle dark chocolate shavings for extra indulgence.

Notes

Use freshly brewed strong coffee or espresso and let it cool before dipping ladyfingers to avoid sogginess. Whip cream to soft peaks for best texture. Chill at least 4 hours, preferably overnight, for full flavor. Fold ingredients gently to keep cream light and fluffy. For dairy-free, swap heavy cream with coconut cream and mascarpone with vegan cream cheese; use gluten-free ladyfingers for gluten-free version.
