  • 1 pint fresh strawberries, washed and dried thoroughly
  • 6 oz semi-sweet chocolate chips
  • 2 oz white chocolate chips (optional, for drizzling)
  • 1 cup heavy whipping cream, cold
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • Fresh mint leaves (optional garnish)
  • Toasted almond slices (optional garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold cubed butter until mixture resembles coarse crumbs.
  3. Stir in whole milk and vanilla extract just until combined; do not overmix.
  4. Drop dough by large spoonfuls or use a biscuit cutter onto the prepared baking sheet. Bake for 12-15 minutes until golden brown. Let cool completely on a wire rack.
  5. Melt semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip each dry strawberry halfway into the melted chocolate, letting excess drip off. Place on parchment-lined sheet and chill in the fridge for 15 minutes until firm.
  6. In a chilled bowl, beat heavy cream with powdered sugar and vanilla extract until soft peaks form.
  7. Break cooled shortcakes into bite-sized chunks. In each glass, layer shortcake pieces, whipped cream, and sliced fresh strawberries. Top with chocolate-dipped strawberries and drizzle with melted white chocolate if desired.
  8. Refrigerate parfaits for at least 30 minutes to let flavors meld. Garnish with fresh mint leaves or toasted almond slices before serving.

Notes

Use cold butter for flaky shortcake layers. Melt chocolate in short bursts to avoid burning. Ensure strawberries are completely dry before dipping to achieve a glossy finish. Chill whipped cream bowl and beaters for better volume. Let parfaits chill at least 30 minutes before serving. For gluten-free, substitute flour with 1-to-1 gluten-free blend. For dairy-free, use coconut cream and almond or oat milk.
