  • 2 large eggs, room temperature

Instructions

  1. Activate the yeast: In a small bowl, combine 1 cup warm water (110°F / 43°C) with 2 ¼ tsp instant yeast and 1 tbsp granulated sugar. Let sit for 5-7 minutes until foamy.
  2. Mix the dough: In a large bowl, whisk together 2 ½ cups flour, 1 tbsp sugar, and 1 tsp salt. In a separate bowl, beat 2 eggs and add ½ cup warmed milk and 2 tbsp melted butter. Pour wet ingredients into dry mixture, then add activated yeast mixture. Stir gently until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, knead with a stand mixer dough hook on medium speed for 6 minutes.
  4. Let the dough rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  5. Prepare for frying: Heat vegetable oil in a deep fryer or heavy pot to 360°F (182°C). Use a thermometer to maintain temperature.
  6. Roll out and cut dough: Punch down dough, roll into a ½-inch thick rectangle, and cut into 2-inch squares or rectangles.
  7. Fry the beignets: Fry a few pieces at a time for 2-3 minutes, turning once, until golden brown and puffed.
  8. Drain and dust: Remove beignets with a slotted spoon to a cooling rack over a baking sheet. Dust generously with powdered sugar while warm.
  9. Serve immediately for best texture and flavor.
