  • 2 tablespoons vegetable or sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 small onion, finely chopped
  • 1 cup water chestnuts, chopped
  • 1/2 cup shredded carrots
  • 2 green onions, sliced thin
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha or chili garlic sauce
  • 1 teaspoon honey or brown sugar
  • 1 head butter lettuce or iceberg lettuce, leaves separated and washed
  • Fresh cilantro leaves (optional)
  • Chopped peanuts or cashews
  • Lime wedges

Instructions

  1. Wash lettuce leaves and pat dry. Chop garlic, ginger, onion, water chestnuts, carrots, and green onions. Mix soy sauce, hoisin sauce, rice vinegar, sriracha, and honey in a small bowl and set aside.
  2. Heat 2 tablespoons of oil in a medium skillet over medium-high heat. Add minced garlic and grated ginger, stirring quickly until fragrant (30 seconds to 1 minute).
  3. Add ground chicken or turkey to the pan, breaking it up with a spatula. Cook until no longer pink and slightly browned with crispy bits, stirring occasionally (8-10 minutes).
  4. Add chopped onion, water chestnuts, and shredded carrots. Stir and cook until veggies soften slightly but remain crunchy (about 3 minutes).
  5. Pour sauce mixture over the filling. Stir well to coat evenly. Let simmer for 1-2 minutes to thicken the sauce. Add a splash of water if too dry.
  6. Remove pan from heat and stir in sliced green onions.
  7. Spoon warm filling into each lettuce leaf. Garnish with chopped peanuts or cashews, fresh cilantro leaves, and a squeeze of lime.

Notes

Do not overfill lettuce wraps to avoid sogginess. Keep lettuce dry and filling warm while assembling. Use tamari for gluten-free soy sauce alternative. Filling can be made ahead and reheated gently. Adjust sriracha for preferred spice level.
