  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • Optional: pinch of smoked paprika
  • 2 tablespoons chopped fresh parsley or chives for garnish

Instructions

  1. Prep the ingredients: chop onion, celery, carrots, and garlic finely; shred or dice cooked chicken; rinse wild rice if desired.
  2. Sauté vegetables: melt butter in a large pot over medium heat; add onions, celery, and carrots; cook 5-7 minutes until softened; add garlic and cook 1 minute.
  3. Create roux: sprinkle flour over vegetables; stir continuously for 2-3 minutes until paste-like and golden.
  4. Add broth and wild rice: slowly pour in chicken broth while stirring; add wild rice, thyme, rosemary, salt, pepper, and smoked paprika if using; bring to boil, then reduce heat to low, cover, and simmer 40-45 minutes until rice is tender.
  5. Incorporate chicken and cream: stir in shredded chicken and heavy cream; heat gently without boiling; adjust seasoning to taste.
  6. Final touches and garnish: remove from heat; sprinkle chopped parsley or chives on top; serve hot.

Toast the flour with the vegetables to remove raw taste and deepen flavor. Simmer wild rice slowly for perfect texture. Heat cream gently to avoid curdling.
