Cozy Slow Cooker Guinness Beef Stew Recipe with Rustic Soda Bread

  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and cut into chunks
  • 2 celery stalks, sliced
  • 4 medium potatoes, peeled and cut into large chunks (Yukon Gold preferred)
  • 12 oz Guinness stout beer
  • 2 cups low sodium beef broth
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried rosemary, crushed
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp vegetable oil
  • 2 tbsp all-purpose flour
  • 4 cups all-purpose flour (for soda bread)
  • 1 tsp baking soda (for soda bread)
  • 1 tsp salt (for soda bread)
  • 1¾ cups buttermilk (for soda bread)
  • Optional: 1 tbsp chopped fresh herbs like rosemary or thyme (for soda bread)

Instructions

  1. Chop onions, carrots, celery, and potatoes into large chunks. Cut beef chuck roast into 1½-inch cubes and pat dry.
  2. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Brown beef cubes on all sides in batches, about 3-4 minutes per batch. Set aside.
  3. In the same skillet, cook chopped onion until softened, about 3 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Transfer browned beef, sautéed onion and garlic, carrots, celery, and potatoes into the slow cooker. Stir in tomato paste, Worcestershire sauce, dried thyme, rosemary, bay leaves, salt, and pepper.
  5. Pour in Guinness stout and beef broth. Stir gently to combine without breaking potatoes.
  6. Cover and cook on low for 6-8 hours or on high for 4-5 hours until beef is fall-apart tender.
  7. About 30 minutes before serving, mix 2 tablespoons all-purpose flour with cold water to make a slurry. Stir into stew to thicken sauce. Cook uncovered for remaining time.
  8. Preheat oven to 425°F (220°C). In a large bowl, whisk 4 cups flour, baking soda, and salt. Make a well in the center and pour in buttermilk and herbs if using. Stir until just combined; dough will be shaggy and sticky.
  9. Turn dough onto floured surface and shape into a round loaf. Transfer to baking sheet or cast iron skillet. Cut an “X” on top with a sharp knife.
  10. Bake soda bread for 30-35 minutes until golden and crusty. Tap bottom; it should sound hollow.
  11. Let soda bread cool on wire rack. Serve warm alongside Guinness beef stew.

Notes

Brown the beef before slow cooking to add depth of flavor. Use chuck roast with good marbling for tenderness. Thicken stew with flour slurry 30 minutes before serving. Start soda bread about an hour before stew finishes to serve fresh. For gluten-free option, use gluten-free flour and omit soda bread or use gluten-free rolls. Substitute buttermilk with dairy-free yogurt mixed with lemon juice if needed.
