  • 4 cups (480g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 4 tablespoons (60g) unsalted butter, cold and cubed
  • 1 3/4 cups (420ml) buttermilk (or milk plus 1 tablespoon vinegar or lemon juice as substitute)
  • 3/4 cup (115g) raisins
  • 1 tablespoon caraway seeds (optional but highly recommended)

Instructions

  1. Preheat your oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together flour, baking soda, salt, and sugar.
  3. Cut in the cold, cubed butter using a pastry cutter or fingertips until mixture resembles coarse crumbs.
  4. Stir in raisins and caraway seeds evenly throughout the flour mixture.
  5. Gradually add buttermilk and mix until the dough just comes together; avoid overmixing.
  6. Turn dough onto a lightly floured surface and knead gently 4-5 times to form a ball.
  7. Pat dough into a round about 8 inches wide and 2 inches thick.
  8. Score a deep cross about 1/2 inch deep into the top of the dough.
  9. Place on prepared baking sheet and bake for 35-40 minutes until golden brown and hollow sounding when tapped on the bottom.
  10. If doughy inside, bake an additional 5 minutes and check again.
  11. Cool on a rack for at least 30 minutes before slicing.

Notes

Keep the butter cold to create a tender, flaky texture. Do not over-knead the dough to avoid toughness. Score the dough to help it cook evenly. Tent with foil if browning too fast. Flour hands lightly if dough is too sticky but avoid over-flouring.
