  • 1 large yellow onion, diced

  • 4 medium red potatoes, quartered
  • 4 cups beef broth, preferably low sodium
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Chopped fresh parsley, for garnish

Instructions

  1. Prep the beef and vegetables (10-15 minutes): Cut the beef chuck into 1.5-inch cubes. Peel and chop carrots, celery, potatoes, and dice the onion. Mince garlic cloves. Set aside.
  2. Brown the beef (8-10 minutes): Select “Sauté” mode on your Instant Pot and heat 2 tablespoons olive oil. Working in batches, add beef cubes and brown on all sides. Remove beef to a plate once browned.
  3. Sauté aromatics (3-4 minutes): Add diced onion to the same pot and cook until translucent, about 3 minutes. Stir in minced garlic and sauté for 30 seconds until fragrant. Scrape any browned bits from the bottom.
  4. Add liquids and seasoning (2 minutes): Pour in 4 cups beef broth, scraping the bottom to loosen any stuck bits. Add tomato paste, Worcestershire sauce, dried thyme, rosemary, bay leaves, salt, and pepper. Stir well to combine.
  5. Return beef and add vegetables (1-2 minutes): Place browned beef back in the pot. Add carrots, celery, and red potatoes on top. Do not stir.
  6. Pressure cook (35 minutes): Seal the Instant Pot lid and ensure the valve is set to “Sealing.” Select “Manual” or “Pressure Cook” mode on high for 35 minutes. Allow natural pressure release for 10 minutes, then quick release remaining pressure.
  7. Thicken stew (optional, 5 minutes): Mix 2 tablespoons flour with ¼ cup cold water to make a slurry. Stir into the stew using the “Sauté” function and cook for 3-5 minutes until thickened. Adjust seasoning as needed.
  8. Garnish and serve: Remove bay leaves, sprinkle chopped fresh parsley on top, and serve warm.

Notes

Brown the beef properly to enhance flavor. Do not stir after adding vegetables to avoid burning. Use natural pressure release for tender meat. For gluten-free, substitute flour with cornstarch or arrowroot powder. Thicken stew after cooking to prevent scorching.
