A quick and easy personal-sized chocolate chip cookie baked in a cast iron skillet, delivering a soft, chewy center with crispy edges and melty chocolate chips.

Ingredients

Scale
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup packed brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk, room temperature
  • 1/2 cup (62 grams) all-purpose flour
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 1/3 cup (60 grams) chocolate chips
  • Pinch of flaky sea salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugars in a medium bowl until light and fluffy, about 2-3 minutes.
  3. Mix in vanilla extract and egg yolk until fully combined.
  4. In a small bowl, whisk together flour, baking soda, and salt.
  5. Gradually fold dry ingredients into wet ingredients until just combined.
  6. Stir in chocolate chips evenly throughout the dough.
  7. Spread the dough evenly into a lightly greased 6-inch cast iron skillet, smoothing the top gently.
  8. Bake for 15-18 minutes until edges are golden and crisp and center is soft but set. Start checking at 14 minutes.
  9. Sprinkle flaky sea salt on top immediately after baking.
  10. Let the cookie rest for 5 minutes before serving.

Notes

Use room-temperature ingredients for best results. Do not over-mix the dough to keep the cookie tender. Watch the oven closely starting at 14 minutes to avoid overbaking. Flaky sea salt on top enhances the chocolate flavor. For vegan or dairy-free versions, substitute dairy-free butter, vegan chocolate chips, and use a flax egg instead of egg yolk.
